Low Sugar - Sugar Free Red Plum Jam

Sugar Free Red Plum Jam

4 cups diced plums
1 cup lemon juice
3 Tbsp. Ball Sugar free Pectin
1 Tbsp. Butter
Up to 1 Cup Sugar Free Sweetener

Put diced plums and lemon juice in 8 quart saucepan.  Gradually add pectin.  Bring to a rolling boil.  Add sugar substitute and bring back to a hard, rolling boil.  Boil for 1 minute.  
Ladle into jam jars.  Process in hot water bath for 6 minutes.  Makes 8 four ounce jars jam.
